Drain the tofu and pat it dry with paper towels to remove excess moisture.
Add tofu, banana, coconut flour and maple syrup into a food processor. Pulse the mixture until it forms a thick batter-like consistency. Scrape down the sides of the food processor bowl as needed to ensure even mixing.
Heat a non-stick frying pan over medium heat and add a small amount of oil to coat the bottom. Using a spoon or your hands, scoop out the tofu batter and forgsm it into small cakes or patties. Place them gently onto the heated skillet.
Cook for about 3-4 minutes on each side, or until they are golden brown and crispy on the outside.
