  1. In a food processor, add rice cakes, dates, oats, shredded coconut, and peanut butter.

  2. Pulse until the mixture resembles a sticky paste.
    If the mixture looks like crumbs, add more dates or peanut butter until it becomes a sticky paste.
    You can also add a dash of honey or maple syrup, but that is completely optional.

  3. Using your hands, form tablespoons of the mixture into balls and roll in additional shredded coconut and oats if desired.

  4. Enjoy right away or store in an airtight container.
