In a food processor, add rice cakes, dates, oats, shredded coconut, and peanut butter.

Pulse until the mixture resembles a sticky paste.
If the mixture looks like crumbs, add more dates or peanut butter until it becomes a sticky paste.
You can also add a dash of honey or maple syrup, but that is completely optional. -
Using your hands, form tablespoons of the mixture into balls and roll in additional shredded coconut and oats if desired.
