BIRTHDAY RICE CAKE CHOCOLATE TRUFFLES

These treats are such an easy, healthy, and convenient way to celebrate while also saving time on making a cake.

Ingredients
  • 10 rice cakes
  • 1 banana
  • 5 Medjool dates, pitted
  • 1/3 cup nut butter (I used peanut butter)
  • 1/3 cup cocoa or cacao powder
  • 50 grams dark chocolate, melted, for coating
  • sprinkles, for decorating
Instructions
  1. Place the rice cakes, banana, pitted dates, nut butter, and cocoa/cacao powder into a food processor. 

  2.  Pulse until the mixture resembles crumbs and sticks together.

  3. Using your hands, form tablespoons of the mixture into balls.
    Place the balls in the freezer for 15 minutes. This will help the chocolate coating to set faster.

  4. Take the balls out of the freezer and dip each one into the melted chocolate, then decorate with sprinkles.

  5. Once the chocolate has set, enjoy the treats right away or keep them in the fridge for up to 7 days.
