CHICKPEA SUSHI BALLS

A super fun idea to make snack or lunch and a great way to use up that leftover cooked rice.

Ingredients
  • 1 1/2 cup cooked or canned chickpeas
  • 1 1/2 cup cooked rice, I used sushi rice
  • 1 tablespoon mayonnaise, use dairy-free if vegan
  • 1 tablespoon sriracha
  • 1 tablespoon soy sauce
  • 3/4 cups teared nori seasweed + more for coating
  • sesame seeds, for coating
  • chilli flakes, for coating
Instructions
  1. Add chickpeas into the large mixing bowl and mash using a potato masher or a fork

  2. Add in cooked rice, mayonnaise, sriracha soy sauce and nori. Mix everything to combine. 

  3. Using your hands form mixture into a balls. 

  4. Place the balls into a container, add in an additional nori, sesame seeds and chilli flakes, pop the lid on and shake it well until all the balls are evenly coated.

  5. Serve and enjoy right away!
