This dip is so easy to make and incredibly versatile. It can be easily transformed into a nourishing soup or a creamy pasta sauce.
CHUNKY ROASTED ZUCCHINI DIP

Preheat the oven to 180C and line a baking tray with parchment paper.

Cut zucchinis and carrots into small cubes, then arrange them on the baking tray.

Peel and dice the onion, adding it to the baking tray along with cherry tomatoes.

Peel the papery outer layers from the whole garlic bulb, cut off the top 1/4 of the cloves, and add the garlic to the tray with the other vegetables.

Drizzle everything with avocado oil and sprinkle with dry oregano and parsley.

Place in the oven for 30-40 minutes or until the vegetables are tender and the garlic is soft.

Transfer all the roasted vegetables into a blender, add roasted cashews and squeeze out roasted garlic. Pulse until the sauce is creamy, with some chunks remaining.

Serve garnished with hemp seeds and chili flakes, alongside toasted bread slices.
