Preheat the oven to 180°C and line a baking tray with parchment paper.

Transfer the sweet potatoes, cauliflower, and onions onto the prepared tray. Drizzle with oil and sprinkle with spices.

Give the vegetables a good toss and place in the oven for 30 minutes.

Remove from the oven and scatter beans and corn over the vegetables. Sprinkle with cheese and return to the oven for another 10 minutes or until the vegetables are cooked through and the cheese is melted.

Add cherry tomatoes, avocado, jalapeños, yoghurt, coriander, and chili flakes.
