NO CREAM CREAMY BROCCOLI VEGGIE SOUP

INGREDIENTS

Instructions

  1. Preheat oven to 180C and line a baking tray with parchment paper.

  2. Arrange all the vegetables on the prepared baking tray, drizzle with oil and sprinkle with spices. Bake for 25-30 minutes.

  3. Add roasted vegetables into a blender with spinach and warmed up water/vegetable stock. Puree into a creamy texture, add more water/stock if the soup is too thick.

  4. Garnish, serve and enjoy right away.
