NO CREAM CREAMY BROCCOLI VEGGIE SOUP

Preheat oven to 180C and line a baking tray with parchment paper.

Arrange all the vegetables on the prepared baking tray, drizzle with oil and sprinkle with spices. Bake for 25-30 minutes.

Add roasted vegetables into a blender with spinach and warmed up water/vegetable stock. Puree into a creamy texture, add more water/stock if the soup is too thick.

Garnish, serve and enjoy right away.
