This healthy indulgence happens to be my mum’s favourite dessert. It’s so versatile and delicious and also makes for a great breakfast option!
Preheat the oven to 200°C.
Wash the apples and remove the core from the middle, but do not go all the way through, leaving the bottom of the apple intact.
Next, remove the flesh, leaving about a 1cm border.
In a mixing bowl, combine oats, cinnamon, nuts, seeds and yoghurt. Fill the apples with the oat mixture and place them in a baking tray.
Pop them in the oven for 30 minutes or until the apples are soft and the oat filling is baked through.
Remove from the oven and let them cool down for 10 minutes.
Serve warm, drizzled with maple syrup and enjoy.
