STUFFED ZUCCHINI BOATS

  1. Preheat oven to 180C and line a baking tray with parchment paper.

  2. Slice each zucchini in a half lengthwise and scoop out the insides, set aside. Heat olive oil in a frying pan and add onions. Cook for 5 minutes or until onions are golden brown. Add in carrots, capsicum, mushroom and zucchini flesh. Cook for 10-15 minutes or until the vegetables are tender. Add in sour cream, soy sauce, mustard and seasonings. Mix to combine and cook for another 3-5 minutes.

  3. Add the mixture into zucchini boats and sprinkle with cheese. Bake for 30-35 minutes or until ready.

  4. To make the additional sauce simply combine all the ingredients in a small jug. Serve the boats warm, drizzled with the sauce and enjoy right away.
