Ingredients
  • 1 zucchini, grated
  • 3/4 cups crumbled feta
  • 1/2 cup chopped parsley
  • 1/2 cup chopped mint
  • 1/2 cup chopped dill
  • 1 cup chickpea flour
  • 1/3 cup water
  • 1 tablespoon olive or avocado oil, for frying
  • For the Sauce:
  • 1/2 cup Greek yoghurt
  • 1 small cucumber, finely chopped
  • 1/3 cup finely chopped parsley
  • 1/3 cup finely chopped mint
  • 1 teaspoon olive or avocado oil
  • 1 teaspoon lemon juice
  • 1 garlic clove, minced (optional)
  • To Serve:
  • 4 burger buns, lettuce, tomato slices, red onion, cucumber slices
Instructions
  1. In a bowl, combine grated zucchini, feta, parsley, mint, dill, flour, and water. Let the mixture sit for 10 minutes until it becomes sticky enough to form burgers.

  2. Using your hands, shape the mixture into 4 burgers and fry them in a pan over low heat until they are crispy and brown on both sides.

  3. To make the sauce, combine all the ingredients in a small jar and mix until creamy and smooth.

  4. Heat the burger buns and assemble your burgers. Enjoy immediately.
